Pancakes with Panache

The Pancakes with Panache group makes a different type of pancake each week. This weeks recipe featured Chocolate Raspberry Pancakes.

The group voted that this recipe the best yet.

 Chocolate Raspberry Pancakes

Ingredients:

Cakes:        1 ½ C          Buttermilk Pancake Mix

1/3 C           unsweetened cocoa powder

1/2  C          sugar

1                 egg

1/2 C           cottage cheese

1/2 C           vanilla Greek-style yogurt

 C                water

2 tbsp         melted butter

1 C              white chocolate chips

Topping:     1 C              raspberry jam or preserves

          2 Tbsp        fresh lemon juice

          1/4 C           water

Garnish:      White chocolate chips

                   Fresh raspberries

                   Whipped cream

Directions:

1.   Mix all ingredients for the cakes together until there are no lumps.  Add water slowly adjusting as needed; batter will be moist and thick.

2.   Mix the ingredients for the topping in a small sauce pan over medium low heat to a syrup consistency.

3.   Cook cakes on heated prepared griddle (preheat to 250°F).

4.   Top with syrup, then whipped cream, raspberries and chips, to serve.
